The Mims Supper Club began in Belton, Texas in 2022 at the charming and historic Tirzah. Our success there has led us to announce our latest partnership and our first expansion - the elegant and chic Hotel Indigo on Red River Street in Downtown Austin! While we're staying true to our roots (Belton, we'll never quit you!), we are excited to introduce our brand of hospitality to an expanded audience in a city as epic as Austin.
Executive Chef Patrick Mims pioneered the "farm to fork" approach to fine dining at the legendary Cobbs Mill Inn in the New York area. Nearly 40 years of experience led him to create The Mims Supper Club, an exclusive once-a-month dining series featuring seasonal and local ingredients in a creative menu that will delight your senses every month.
"We went to the June 27th supper and it was phenomenal! The service was absolutely top-notch. The hostess Marlo was very charismatic and made sure everyone felt welcome! Chef Patrick brought some great plates too. The filet was easily one of the best I've ever had and the peach caprese salad was delightful! It was absolutely lovely everything from the service to the food to the ambience. It was just what I’ve felt like I’ve been missing since moving out here. Every single thing we ordered tasted fabulous! The wine pairings were spot on, and the hosts were so accommodating to my last-minute addition as we were unsure if he would even make it on time. I called maybe two hours before the event when we found out he could make it and they still, without any hesitation, accommodated his menu selections and a seat at the table. "I just came from this event and let me just say if you have not attended one of these dinners it should be next on your list. They do these once a month. We were served a four course meal. My daughter had the pasta, I had the short ribs (and thanks to my new friend Tressa M. Mims I got to sample the Chilean Sea Bass too) every course every bite was absolutely delicious. The Chef, Patrick and his partner Marlo were friendly and welcoming, it was a small intimate gathering and everyone was just wonderful. I personally will be putting these on my monthly calendar.
